2-3 lbs. chicken parts or lean pork cubes Several cloves of garlic to taste, crushed 1 tsp. black peppercorns 1/4 c. white vinegar 1/4 c. soy sauce (low sodium, if possible) 1 tbsp. oil Approx. 1/2 c. coconut milk (or other milk or cream) Mix first 6 ingredients together in large pot, bring to boil, then reduce heat and simmer, covered, for 1/2 hour. Remove cover and add coconut milk, increase heat to medium high and cook and watch carefully until sauce reduces (about 5 minutes) and thickens. It's ready to serve. |
