APPLE COBBLER
5 cooking apples
3/4 c. sugar
1/2 tsp. cinnamon
1 tsp. lemon juice
1 c. cake flour
1 tsp. baking powder
3 tbsp. butter
1/4 c. skim milk
1/4 c. sugar
1/4 c. water

Peel, core and slice apples. Place in a 9 inch baking dish. Combine the sugar, cinnamon and lemon juice. Sprinkle over the apple slices and bake at 350 degrees for 30 minutes.

Meanwhile, sift the flour and the baking powder. Using a pastry blender, cut in the butter. Sprinkle in the milk and press the dough into a ball. Turn the dough onto a floured board and pat to 1/3 inch thickness. When the apples have cooked for 30 minutes, remove from the oven. Place dough on top of apples and cut slits for steam.

Raise oven heat to 450 degrees and bake cobbler 20 minutes more. Boil together the 1/4 cup of sugar and the 1/4 cup of water. Pour this over cobbler and continue baking 10 minutes longer.
