CHEESE PINEAPPLE RING 
1 lg. pkg. lemon Jello
2 c. hot water
1 c. pineapple juice
1 (3 oz.) cream cheese, softened
1 c. crushed pineapple OR 15 1/4 oz. includes 1 c. juice also
1/2 c. blanched almonds
1 c. Cool Whip OR whipped cream

Dissolve Jello in hot water. Add pineapple juice. Chill until slightly thickened. Break softened cream cheese into Jello and beat until light and fluffy. Fold in pineapple, almond and whipped cream. Pour into a ring mold and chill until firm. Unmold and serve with Hampshire sour cream (optional).
