CAJUN RICE DRESSING 
1 c. onion
1 c. celery
1/2 bell pepper
2 pods garlic
Salt and pepper

Chop ingredients and cook until tender in oil. 1 lb. gizzards

Boil until tender then chop finely. Combine ingredients; cook together 5 minutes.

Cook 2 or 3 cups rice. Stir in rice and add 2 cups chopped green onions, 1 tbsp. parsley. Stir over heat until mixed well. Add juice from chicken if needed.
