MINNESOTA CHOCOLATE CAKE 
2 c. flour
1 3/4 c. sugar
1/2 c. cocoa
1 tbsp. baking soda
1 tsp. salt
1 tsp. vanilla
2 eggs
1 c. buttermilk (can add 1 tbsp. of lemon juice to regular milk)
1 c. coffee
2/3 c. oil

Mix dry ingredients well. Add eggs and milk, mix well. Add coffee, oil and vanilla and mix. Pour into a 9 x 13 pan that has been greased and floured. Bake at 350 degrees for 30 to 35 minutes. Use frosting of your choice.
