2 c. peeled, cubed potatoes
1 c. chopped onion
1 c. thinly sliced carrots
1/2 c. diagonally sliced celery
2 tbsp. water
1/2 tsp. salt
1/2 tsp. pepper
8 slices bacon
2 tbsp. butter

Crisply cook bacon; cut into 2-inch pieces. In 3-quart microwave-safe casserole, combine first 5 ingredients. Cover and microwave on HIGH 5 minutes; drain. Add salt and pepper.

Place potato mixture on 18 x 18 square of heavy duty foil. Top with bacon and dot with butter. Wrap securely i double fold seal. Place on grill 4-6 inches from coals.

Cook 25-30 minutes or until vegetables are tender. Makes 8 (1/2-cup) servings.
