ARTICHOKE RICE SALAD | |
1 pkg. UNCLE BEN'S® long grain and wild rice mix 4 green onions, thinly sliced, use whole onion 1/2 green pepper, chopped 12 stuffed green olives, sliced 1 (6 oz.) jar marinated artichoke hearts 3/4 tsp. curry powder, or more to taste 1/3 c. mayonnaise Cook rice, omitting butter, use 1/3 cup less water. Cool rice. Add onions, peppers and olives. Drain artichoke hearts. Save marinade and cut in half. Combine artichoke marinade with curry and mayonnaise. Add hearts to rice salad. Add dressing to taste. Chill at least 3 hours. |
