OLIE BOLLEN 
1 1/2 pkgs. yeast
3/4 c. warm water
1 tsp. sugar
3 eggs
2 c. milk, brought to scalding, then cooled to lukewarm
3 tbsp. sugar or light corn syrup
2 tsp. salt
4-5 c. flour
1 lb. raisins
Hot oil for deep frying
Granulated or powdered sugar

Mix warm water and 1 teaspoon sugar with yeast and let stand for 15 minutes. Beat eggs and add to warm milk, then combine with yeast mixture, the 3 tablespoons sugar or corn syrup, the salt and 2-3 cups of flour. Stir in the raisins and add enough of the remaining flour to make a stiff dough which falls easily off a spoon.

Cover dough and let rise in a warm place about 2 hours. Heat oil to 375 degrees and drop dough into it by tablespoonful. Fry each fat ball until golden (about 2 minutes per side; they should turn over by themselves, but you may have to turn them). Be sure temperature is correct. If oil is too hot, they will brown on the outside before the middle is done. Roll in sugar or powdered sugar while still warm. Yield 60 fat balls.
