SAUSAGE BALLS 
1 lb. hot or mild sausage
1 (8 oz.) pkg. sharp cheddar cheese
Dash cayenne pepper
3 c. Bisquick

Let sausage stand at room temperature 30 minutes. Melt cheese in double boiler (if shredded will melt faster). Mix all ingredients together and roll into small balls the size of a quarter. Bake in 350 degree oven, 15 minutes on ungreased pan. Serve warm or cool. Freezes well, then put in 300 degree oven 7 to 8 minutes.

Yield: 90 balls

Variations: dash of sage, dried parsley, dried green onions, paprika
