CHERRY NUT CAKE 
3 c. cake flour
3/4 tsp. salt
3 tsp. baking powder
2/3 c. shortening (butter)
1 1/2 c. sugar
1 c. milk
1 tsp. vanilla
4 egg whites
1/4 c. chopped maraschino cherries
1/4 c. nuts

Sift flour, salt and baking powder together 3 times. Blend shortening and sugar until fluffy. Mix milk and vanilla. Add dry and liquid ingredients alternately to shortening mixture. Fold in egg whites which have been stiffly beaten. Fold in cherry and nuts. Bake in moderate oven at 350 degrees for 30 minutes. Frost with 7 minute icing. Sprinkle with nuts and cherry. The grandchildren's favored cake.
