NO EXCUSE BREAD | |
2 pkgs. yeast 2 tsp. salt 1/3 c. oil or softened butter 1/3 c. honey or sugar 2/3 c. powdered milk (no need) 2 eggs, (no need) 1 c. wheat germ (no need) 2 c. warm water 7 c. unsifted unbleached or wheat flour Preheat oven to 375 degrees. Put first 8 ingredients (all room temperature or warmer) and 3 cups flour into large mixing bowl. Beat 5 to 10 minutes at medium speed of electric mixer. Remove beaters. By hand, stir in another 2 cups of flour, no need to make it smooth. Sprinkle 1 cup flour in a circle about 10 inches in diameter on the kneading surface. Turn out the dough on this flour. Oil your hands and begin kneading in flour, using fingertips only, until dough stiffens up and isn't so sticky. Knead 5 to 10 minutes or until dough is smooth. Adding flour if necessary. Divide into 2 loaves. Let rise in a warm place 2 hours. Bake 30 to 35 minutes. |
