IRISH SODA BREAD | |
4 c. all-purpose flour 1/2 c. sugar 1 tsp. salt 1 tsp. double acting baking powder 1/2 c. butter 2 c. raisins 1 1/3 c. buttermilk 1 egg, unbeaten 1 tsp. baking soda 1 egg or a little cream (as needed option) Preheat oven to 375 degrees. Grease a 2 quart casserole. Into bowl sift flour, sugar, salt and baking powder together with a pastry blender. Cut in butter until like coarse cornmeal. Stir in raisins. Combine buttermilk, egg and soda; stir into flour mixture until just moistened. Turn onto floured surface, knead lightly until smooth shape. Put into casserole. With knife make a cross 1/4 inch deep. Bake 1 hour and 10 minutes. Cool in pan. |
