SQUASH CASSEROLE 
8 to 10 med. squashed
1 lg. onion
1 tsp. lemon pepper
1 to 2 c. grated Velveeta cheese
Ritz crackers

Slice squash and onions in skillet with about 2 cups water. Cook until tender. Drain off any water if doesn't all cook off. Season with lemon pepper and add cheese. Place in greased rectangular casserole and top with ritz crackers. Cook at 400 degrees until bubbly, about 15 minutes.
