MY MOTHER'S RED VELVET CAKE 
2 1/2 c. flour
1 c. buttermilk
1 1/2 c. sugar
1 c. Wesson oil
1 tsp. baking soda
1 tsp. salt
1 tsp. vinegar
2 tbsp. cocoa
2 oz. red food coloring (this amount is correct)
2 eggs
1 tsp. vanilla

Cream sugar and oil. Add eggs and beat well. Stir dry ingredients and add to creamed mixture. Add vinegar and coloring. Mix well. Add buttermilk and vanilla. Beat well. Pour into 3 (9 inch) pans and bake 15 minutes at 350 degrees.

FILLING:

1 stick butter
1 box powdered sugar
1 c. chopped nuts
1 tsp. vanilla
8 oz. pkg. cream cheese

Cream butter and cheese. Add vanilla. Sift sugar and mix with butter mixture. Add nuts and fill and frost cake.
