OVEN SWISS STEAK 
1 1/2 lbs. beef round steak
1/4 c. flour
1 tsp. salt
3 tbsp. oil
2 (or more) c. tomato juice
1 tsp. vinegar
2 tbsp. brown sugar
1/2 c. celery, chopped
1/2 c. carrots, chopped
2 tbsp. onion, chopped
1 tsp. Worcestershire sauce

Cut meat in serving pieces. Combine flour and salt; coat meat, reserving remaining flour for sauce. Brush meat in oil. Transfer meat to shallow baking dish. Blend remaining flour into pan drippings in the skillet. Add rest of ingredients. Cook and stir until mixture comes to a boil. Pour over meat. Cover and bake at 350 degrees for 2 hours or until meat is tender. Serves 4.
