APPLE SQUARES
CRUST:

3 c. flour
1 tsp. salt
1 c. shortening
2 tbsp. sugar
2 eggs, separated
Milk
Cornflakes

In mixing bowl, combine flour and salt. Using pastry blender, cut in shortening. Add sugar. Mix. In mixing cup, beat egg yolks. Add enough milk to make 2/3 cup. Stir into flour mixture to form soft dough. Divide in 2 portions. Roll out 1 portion to fit in bottom of 9 x 13 inch pan. Crumble cornflakes, about 1/2 cup, over bottom crust.

FILLING:

6 to 8 apples
1/2 tsp. cinnamon
1 1/2 c. sugar
1/4 tsp. nutmeg

Peel and slice apples. In mixing bowl, combine apples with cinnamon, nutmeg and sugar. Spread evenly over crumb mixture in pan. Roll out remaining dough. Place over apples and seal edges. Beat egg whites until frothy but not stiff. Spread over top crust. Bake in 400 degree oven for 45 minutes.

ICING:

1 1/2 c. powdered sugar
1/4 tsp. vanilla

In small bowl, combine powdered sugar, vanilla and enough water to make icing spreadable. Drizzle over top while bars are still hot. Cool. Cut into squares.
