SEAFOOD AU GRATIN 
1 lb. sharp cheddar cheese
1 lb. soft American or Velveeta cheese
1 stick real butter
1/2 gallon milk
1 tbsp. fresh garlic
1 lg. onion, cut fine and sauteed
1 tsp. white pepper
1 tsp. seafood base

Select seafood to your taste, shrimp, crab meat, lobster, or grouper (or any fresh, white, flaky fish).

In large saucepan, combine all ingredients except seafood (leave several slices of sharp cheese for garnish). Cook this mix slowly to melt cheese and stir frequently so it does not burn or stick to bottom. While this is cooking, cut all seafood to small bite size chunks. Make a "rue" (flour and butter mixed to peanut butter type consistency to be added later).

When cheese mix is thoroughly melted add seafood raw to mix. Stir in well and cook for 5 minutes on medium heat. When finished add rue slowly to thicken mix. If you use too much just add milk to cut it.

When thickened, pour into baking dish and top with strips of sharp cheese. Bake at 325 degrees for 15-20 minutes. All ovens are different, do not let top burn. Serve in casserole or over rice.
