SCALLOPS AU GRATIN | |
1 med. green pepper 1 med. onion 4 celery stalks 1 lb. scallops 4 tbsp. butter 1 1/2 c. soft bread crumbs 1/2 c. grated Cheddar cheese 1 c. light cream Preheat oven to 350 degrees. Chop green pepper, onion, and celery. Melt 2 tablespoons butter and mix with bread crumbs and cheese. Melt remaining 2 tablespoons butter and saute peppers, onions, and celery for 5 minutes. Arrange layers of scallops, cheese and bread crumb mixture, and vegetables in greased casserole dish. Season each layer with salt and pepper. Top layer should be cheese and bread crumbs. Pour cream over top. Bake 30 minutes in a 350 degree oven. Serves 3-4. |
