CRUSTLESS QUICHE 
1/4 lb. butter
1/2 c. flour
6 eggs
1 c. milk
1 (3 oz.) pkg. cream cheese
1 lb. Monterey Jack cheese
2 c. sm. curd cottage cheese
1 tsp. baking powder
1/2 tsp. salt
1 tsp. sugar

Melt butter in saucepan. Add flour; cook until smooth. Beat eggs, milk and cheeses, baking powder, salt, and sugar. Stir into butter mixture; blend. Pour into well greased 9 x 13 inch pan. Bake, uncovered, for 45 minutes. Serves 15. This casserole can be frozen.
