BREAKFAST OMELET 
1 can whole green chiles
3 eggs
3 c. milk
1 c. biscuit mix
1 c. sharp cheese

Wash and remove seeds from chiles. Slit open and lay flat in bottom of buttered casserole. Beat eggs. Add milk. Stir in biscuit mix. Pour over peppers and top with grated cheese. Bake at 325 degrees about 50 minutes or until set.
