FRUIT CAKE 
1 box Betty Crocker yellow cake mix
1/2 c. water
2 tsp. salt
4 eggs
2 tsp. lemon extract or orange

Mix in bowl; beat 2 minutes until well mixed. 1/2 lb. candied pineapple 1/2 lb. candied cherries 1/2 lb. dates 1/2 c. flour

Cut fruit into small pieces and flour real well so it won't stick together. Add the pecans; stir until well floured. Pour batter over floured fruit. Stir until well mixed. This batter will be very stiff. Pour into loaf pans lined with foil paper. Bake in 275 degree oven for 2 hours with a pan of hot water set under the cake. This keeps the cake from drying out while baking.
