OATMEAL THUMBPRINTS | |
1 1/2 c. butter 1 c. packed brown sugar 1 egg 1 tsp. vanilla 2 1/2 c. quick or regular oats, uncooked 2 c. flour 1 3/4 c. finely chopped nuts or chocolate flavored decors 2/3 c. jelly or jam (I like raspberry) 1/2 tsp. salt (optional) Preheat oven at 350 degrees. Beat butter and sugar until fluffy. Beat in egg and vanilla. Add oats, flour and salt (optional). Mix well. Form 1-inch balls, roll in nuts. Place 2 inches apart on ungreased cookie sheet. Press centers with thumb. Fill with jelly. Bake 12-15 minutes. Cool. About 4 1/2 dozen. |
