HOMEMADE MINT CHOCOLATE ICE
CREAM
 
6 to 8 eggs
2 cartons whipping cream
Pinch of cream of tartar
2 c. sugar
2 tsp. mint extract
1 tsp. vanilla
Few drops of green food coloring
Pkg. of mini chocolate chips

Separate eggs. Beat whites with the pinch of cream of tartar until they form stiff peaks. Fold in whipping cream, sugar, mint extract, vanilla and green food coloring. Pour into the ice cream freezer and fill with milk almost to the fill line. Freeze according to freezer directions, except stop the freezer when ice cream is almost frozen and add the package of chocolate chips.

Omit the food coloring, mint extract and chocolate chips and increase vanilla to a tablespoon for rich vanilla ice cream.
