ZUCCHINI TOMATO CAKE 
2 c. grated sharp cheddar cheese
3 c. sm. croutons
4 c. sliced zucchini
1/2 c. chopped onion
1/2 c. chopped bell pepper
1 can tomatoes, well drained and diced
1/2 c. tomato sauce or juice
4 tbsp. butter, melted
1/8 tsp. salt
1/8 tsp. pepper
1/2 tsp. Italian seasonings if desired

Preheat oven to 350 degrees. Reserve 1/2 cup cheese and 1/2 cup croutons. Combine remaining cheese, croutons, the zucchini, onion, green pepper, tomatoes, and juice. Add butter, salt, pepper and seasonings and mix well. Place in buttered casserole and top with reserved cheese and croutons. Bake covered for 1 1/2 hours. Serve hot.
