1 3/4 c. flour 1/4 c. sugar 2 1/2 tsp. baking powder 3/4 tsp. salt 1 egg 3/4 c. milk 1/3 c. cooking oil Jelly or jam Preheat oven to 400 degrees. Grease muffin pan with some shortening. Measure the flour, sugar, baking powder and salt into a medium size mixing bowl. Stir. Using a fork, beat the egg in a small bowl. Add the milk and oil, and beat with fork until well mixed. Pour milk mixture over flour mixture and stir only until all flour is wet. Batter will be lumpy. Spoon half the batter into muffin pans until each cup is about 1/3 full. Put a teaspoon of jelly or jam on the batter in each cup. Fill muffin cups with remaining batter. Bake 20 to 25 minutes. |
