LIGHT AND ZESTY CHICKEN 'N RICE 
4 chicken breasts or 2 lb. chicken pieces
1/3 c. Italian salad dressing
2/3 c. uncooked (reg.) rice
1 (16 oz.) bag of frozen broccoli, carrots, water chestnuts and red pepper
1 can Durkee French fried onions
1/2 tsp. Italian seasoning
1 3/4 c. chicken broth

Place chicken in 8 x 12 inch baking dish. Pour salad dressing over chicken. Bake, uncovered for 20 minutes at 400 degrees. Place rice, vegetables and 1/2 can onions under and around chicken. Combine bouillon and Italian seasoning; pour over chicken and vegetables and bake uncovered for 25 minutes.

Top with remaining onions and bake 2 to 3 minutes longer. Let stand for 5 minutes before serving.
