RUM CAKE | |
1 pkg. Duncan Hines yellow cake mix 1/2 c. cold water 1/2 c. Puritan oil 1/2 c. rum 4 med. eggs 1 sm. pkg. Jello vanilla instant pudding mix Beat eggs until light and creamy. Add other ingredients and beat two minutes. Pour into tube pan that has been sprayed with Pam. Bake in preheated 325 degree oven for 45 minutes, or until done when tested with toothpick. Remove from oven and cool for 10 minutes. Turn onto plate, then turn right side up. Prick all sides and top with cooking fork. Pour glaze all over. Be sure to use all glaze. GLAZE: 1 c. water 3/4 c. white sugar 1/2 stick butter 1/2 c. rum (white or brown) Mix sugar and water in heavy pan. Cook 3 minutes on medium heat, stirring now and then. Add butter, stir and cook 2 minutes. Remove from heat and stir in rum. Set aside to pour over cake. |
