SALMON PATTIES 
1 can salmon
1/2 c. onion, diced
1/4 c. green pepper, diced
1 egg
1 c. crushed Ritz crackers
Salt and pepper to taste
1/4 c. oil

Drain, debone and remove skin from salmon. Mix all ingredients well and shape into patties. Cook in oil over medium heat, turning once to brown evenly. Makes about 8 patties.
