STEAMED FISH 
1 1/2 lb. fresh whole fish
1/4 c. fresh ginger, julienne
1/3 c. green onion, julienne
1/2 tsp. cooking wine
2 tsp. soy sauce
1/4 tsp. salt
1/4 tsp. pepper
1 fresh chili, julienne

Make 2 cuts on each side of fish and put on a plate. Combine wine, soy sauce, salt and pepper and sprinkle fish with this. Place ginger, onion and chili strips on top of the fish in attractive manner.

Steam at 375 degrees for 5 minutes. Do not over cook. Fish is done when tested by piercing with a fork at thickest part.

Julienne style: cut in very narrow, thin strips.
