PALACSINTA 
5 eggs
1/2 c. sugar
1 tsp. salt
1 tsp. vanilla
2 1/4 c. flour
2 1/4 c. milk

Blend all ingredients with mixer or egg beater. Oil a 12" skillet. Cover bottom with thin layer of batter (approximately 1/3 cup) by tilting pan. Turn when top begins to dry. Oil pan after every 2nd or 3rd pancake. Spread with jelly, powdered sugar or granulated sugar. Roll up and enjoy. Kids love them.
