MINI SOUR CREAM MUFFINS 
1 c. butter, at room temperature
1 (8 oz.) carton sour cream
2 c. self-rising flour

Combine butter and sour cream. Mix well until smooth. Gradually add flour. Spoon into ungreased miniature muffin pans (1 tablespoon batter to each). Bake at 350 degrees for 25-30 minutes. Makes 3 dozen.
