SOUR CREAM BRAN MUFFINS | |
1 stick unsalted butter, softened 1/4 c. firmly packed brown sugar 1 lg. egg, beaten lightly 1 c. sour cream 1/4 c. dark molasses 1/2 c. raisins 1 c. flour 1 tsp. baking soda 1/4 tsp. salt 1 c. Miller's bran (available at natural food stores) Cream together butter and brown sugar, beat in egg, sour cream, molasses and raisins. In a separate bowl mix flour, soda, salt and bran. Add to first mixture. Spoon into 12 well buttered 1/3 cup muffin tins. Bake at 400 degrees for 15 to 20 minutes. Cool. Makes 12 muffins. |
