SOUR CREAM BRAN MUFFINS 
3/4 c. maple syrup
2 eggs
2 1/2 c. bran (1 c. bran flakes, 1 c. All Bran, 1/2 c. Millers bran)
1 c. sour cream
1 c. flour
1/2 c. chopped walnuts
1/2 tsp. baking soda (mix with flour)

Method: Lightly beat eggs, add maple syrup and bran. Let stand for 5 minutes. With wooden spoon, stir in sour cream. Then add flour and baking soda. Add chopped nuts. Stir only enough to moisten. Makes 12 muffins. Bake at 350 degrees for 20 minutes.
