4 egg yolks
1 tsp. dry mustard
1 tsp. salt
1/4 tsp. white pepper
1/2 c. olive oil
1/4 c. sugar
3 tbsp. red wine vinegar
Juice of 1/2 lemon

Beat egg yolks. Add mustard, salt and white pepper and mix well. Add olive oil, sugar, wine vinegar and lemon juice; mix well. Chill until serving time.

This dressing is great on spinach salad. I include sliced mushrooms, diced eggs and crumbled bacon with the spinach.
