CRANBERRY NUT LOAF 
2 c. flour
3/4 c. sugar
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 c. egg substitute
1 tsp. grated orange peel
3/4 c. orange juice
2 tbsp. salad oil
1 c. coarsely chopped fresh cranberries
1/2 c. chopped walnuts

Sift together the flour, sugar, baking powder, salt, and soda. Combine egg substitute, grated orange peel, orange juice, and salad oil. Add to dry ingredients, stirring until just moist. Fold in cranberries and nuts. Bake in 9 x 5 x 3 inch loaf pan at 350 degrees for 60 minutes or until done. Remove from pan. Cool; wrap and store overnight or longer before serving.
