CRANBERRY CITRUS LOAF 
1 1/3 c. fresh cranberries, halved
1 1/3 c. sugar
1 1/3 c. walnuts, chopped
2 eggs, beaten
1/3 c. brown sugar
4 tbsp. salad oil
1 1/3 c. med. orange
4 c. flour
1 1/3 tsp. salt
3/4 tsp. baking soda
4 tsp. baking powder

Combine cranberries, sugar and walnuts; set aside. Cream together eggs and brown sugar until fluffy. Add salad oil. Grind orange. Add orange juice from orange. Sift together flour, salt, soda, and baking powder. Stir dry ingredients into creamed mixture. Fold in sugared cranberries and nuts; save a little (about 2 tablespoons) to be sprinkled on top. Place in greased and floured loaf pans. Bake at 350 degrees for 50-60 minutes. Makes 2 loaves.
