BAKED MULLET 
1 lb. mullet fillets
1 tsp. salt, divided
1/4 tsp. pepper
1/4 tsp. ground ginger
1/2 c. orange juice
Juice of 1 lemon
1 scallion, thinly sliced (or 2 tbsp. chopped onion)
1 tomato, peeled & chopped
3 tbsp. chopped green pepper
2 tbsp. butter, melted
1 orange, thinly sliced

Rinse fillets and pat dry with paper towels. Place in shallow bowl. Sprinkle fish with 3/4 teaspoon salt, pepper, and ginger. Mix orange and lemon juices, pour over fish and let stand 20 minutes. Place fish in shallow baking pan, reserving juice mixture. Top fish with scallion, tomato and green pepper. Sprinkle with remaining 1/4 teaspoon salt and drizzle with melted butter. Bake in 350 degree oven for 10 minutes. Pour juice mixture over fish and top with orange slices. Bake a few minutes longer until fish flakes easily.
