MEXICAN MEAT LOAF | |
2 lbs. ground beef 1 lg. onion, chopped 1 lg. green pepper, chopped 1 (10 1/2 oz.) can cream of mushroom soup 1 (10 1/2 oz.) can cream of chicken soup 1 (8 oz.) can tomato sauce 1 (4 oz.) can taco sauce 2 (4 oz.) cans chopped chilies 2 c. cooked long grain rice 2 c. shredded sharp cheese or 1 (8 oz.) pkg. cheese slices 1 (7 1/2 oz.) pkg. tortilla chips Brown ground beef; drain. Season with garlic salt and pepper. Add next 7 ingredients; simmer for 15 minutes and add rice. Stir well. In a 13 x 9 x 2 inch baking dish, make alternate layers of meat mixture, tortilla chips, and shredded or sliced cheese, ending with cheese. Bake in a 350 degree gas oven for 15 to 20 minutes or until cheese melts. Makes 8 to 10 servings. |
