PINEAPPLE - ORANGE SALAD 
2 c. unsweetened orange juice, divided
2 env. unflavored gelatin
2 c. unsweetened, crushed pineapple, drained
Sugar substitute to equal 1/4 c. sugar
1/4 tsp. salt
2 tbsp. lemon juice
1/2 tsp. almond extract

Pour 1/2 cup orange juice into a large bowl. Sprinkle gelatin over juice and allow to soften. Heat the remaining 1 1/2 cups orange juice and pour over softened gelatin mixture; blend well. Add remaining ingredients, mix well. Pour into 3-cup mold and refrigerate until set. Unmold and serve. Yield: 12 servings. Each serving: 1/4 cup. Each serving may be exchanged for: 1 fruit.
