MINI CHEESECAKES 
3 (8 oz.) pkgs. cream cheese
1 c. sugar
3 eggs
1 tsp. vanilla
Vanilla wafers (about 40)
2 cans pie filling (cherry, blueberry)
Muffin papers

Blend cream cheese and sugar. Beat in eggs one at a time. Add vanilla. Put papers in muffin tins. Put vanilla wafer in the bottom of each one. Fill 1/3 full with batter. Put pie filling on top. Bake at 350 degrees for 15-20 minutes.
