MINI CHEESECAKES 
CAKES:

5 eggs
Vanilla wafers
Muffin liners
3 (8 oz.) pkgs. cream cheese (softened)
1/2 tsp. vanilla
1 c. sugar

TOPPING:

1 c. sour cream
1/3 c. sugar
1/2 tsp. vanilla

PRESERVES:

Strawberry
Pineapple
Blueberry

1. Preheat oven 300 degrees.

2. Line muffin tins with baking cups.

3. Place 1 vanilla wafer in each cup.

4. Beat cream cheese until smooth.

5. Add eggs, one at a time until smooth.

6. Add vanilla and sugar; mix.

7. Fill cups 3/4 full.

8. Bake 40 minutes.

9. Remove and cool 5 minutes.

10. Mix sour cream, sugar and vanilla

11. Spoon/spread topping mixture on top of cake.

12. Then spoon 1/2 teaspoon preserves on top in center.

13. Return to oven for 5 minutes.

14. Cool and store in refrigerator.
