MINI CHEESECAKES 
12 vanilla wafers
2 (8 oz.) pkg. cream cheese
1/2 c. sugar
1 tsp. vanilla extract
2 eggs
12 foil mini muffin liners

Line muffin with foil liners. Place 1 vanilla wafer in each liner. Mix cream cheese, vanilla and sugar on medium speed, until well blended. Add eggs; mix well. Pour batter over wafers, 3/4 full. Bake 25 minutes at 325 degrees. Remove, cool and top with fruit. Refrigerate and serve.
