LEMON CHESS PIE 
2 c. sugar
2 tbsp. flour
4 eggs
1/4 c. melted butter
1/4 c. milk
4 tsp. lemon rind
1/4 c. lemon juice

Combine ingredients and beat until well blended and smooth. Don't overbeat. Pour into unbaked crust and bake at 400 degrees about 10 minutes. Reduce heat to 350 degrees and bake for 30 minutes. Note: Always put packaged pie crust on cookie sheet to bake.
