OATMEAL CHUNK COOKIES 
8 tbsp. unsalted butter, softened
1 c. rolled oats
1 c. all-purpose flour
5 tbsp. granulated sugar
1/3 c. light brown sugar, firmly packed
2 lg. eggs, slightly beaten
Pinch of salt
1 tsp. baking soda
2/3 c. raisins
1 tsp. ground cinnamon
3/4 c. plus 2 tbsp. pecans, roughly chopped
1/2 c. chocolate chips
1 tsp. vanilla extract

Preheat oven to 350 degrees. Lightly grease a cookie sheet and set aside. Beat the butter and sugar together in a mixing bowl until light yellow in color. Beat in eggs and vanilla. Add remaining ingredients, 1 at a time. Drop by rounded teaspoonfuls onto the prepared cookie sheet. Bake until pale brown and firm to the touch, about 12 to 15 minutes. Cool on a rack. Makes 3 dozen cookies.
