DIANE'S OAT BRAN MUFFINS 
2 c. oat bran cereal
1/4 c. brown sugar
2 tsp. baking powder
1/2 tsp. salt
1 c. skim milk
2 egg whites, slightly beaten
1/4 c. honey
2 tbsp. Puritan oil

Combine dry ingredients. Add milk, egg whites, honey, and oil. Mix just until dry ingredients are moist. Spray bottom only of 6 Texas size or 12 regular size muffin pans. Fill tins almost full. Top with streusel topping. Bake 15-17 minutes or until golden brown.

Options: Add 1/4 cup raisins, 1/4 cup nuts, 1/2 cup mashed banana, 1/2 cup blueberries, chocolate chips, or 1/2 chopped apple.

Streusel Topping: In small bowl, combine 1/2 cup sugar, 1/3 cup flour, and 1/2 teaspoon cinnamon. Cut in 1/4 cup cold butter until mixture resembles crumbs.
