OAT-BRAN RAISIN MUFFINS 
2 1/2 c. oat bran cereal
2 tsp. sugar substitute
1/2 c. raisins
1 tbsp. baking powder
1/2 tsp. salt
1 c. skim milk
4 oz. egg white or egg substitute
1 tbsp. vegetable oil

Preheat oven to 425 degrees. Spray bottoms only of 10 medium size muffin cups or line with baking cups.

Combine dry ingredients. Add milk, egg whites and oil. Mix just until dry ingredients are moistened. Fill muffin cups 3/4 full. Bake at 425 degrees for 15-20 minutes or until golden brown. Makes 10 muffins.

Bran flakes may be substituted by adding 1/2 cup flour.
