OAT BRAN MUFFINS 
MUFFINS:

1 c. oat bran cereal, uncooked
1 c. unbleached flour
1/3 c. brown sugar, firmly packed
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
3/4 c. orange juice (can include pulp)
1/3 c. vegetable oil
1 egg
1 tsp. grated orange peel (optional)

TOPPING:

5 tsp. oat bran cereal or flour
1/4 c. firmly packed brown sugar
1/4 c. nuts, finely chopped
1/4 tsp. cinnamon
2 tbsp. melted butter or oil

Combine cereal, flour, sugar, baking powder, soda, salt and cinnamon. Add juice (and pulp), oil, egg and orange peel, stirring just until moistened. Fill 12 lightly oiled or paper-lined muffin tins 3/4 full. Bake at 400 degrees for 20 minutes or until golden brown. Yield: 12 muffins. Very good.
