RAISIN BRAN MUFFINS | |
14 oz. Raisin Bran cereal 2 1/2 c. sugar 3 1/2 c. whole wheat flour 1 1/2 c. oat bran 5 tsp. baking soda 3 eggs 1 c. unsaturated oil 1 qt. buttermilk Makes 1 gallon batter. May store batter up to 6 weeks in refrigerator. Or bake all the muffins and freeze some. Do not freeze the batter. Stir together dry ingredients. Add beaten eggs, oil, and buttermilk. Mix by hand. Fold in cereal. Spray muffin tins with vegetable oil spray. Fill cups 2/3 full and bake at 400 degrees for 15-20 minutes. Heat for breakfast and treats when you go camping and fishing! |
