BROILED TOMATOES 
3 tsp. olive oil
4 med. size ripe tomatoes, cored & sliced 1/2 inch thick
1 clove garlic, minced
2 tbsp. minced parsley
1/8 tsp. black pepper

Heat broiler. Spray baking sheet with Pam. Arrange tomato slices in single layer. In small bowl mix oil, garlic, parsley and pepper; drizzle over tomatoes. Broil 5 inches from heat for 3 minutes. (Measure 1 cup servings.) Single serving = 1 cup vegetable.
