E.'S ENCHANTED CHILDREN'S CHOICE
COOKIES
 
2 1/4 c. flour
1/2 c. sugar
1/2 c. packed brown sugar
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 c. shortening
1/2 c. peanut butter
1/4 c. applesauce
1/2 tsp. vanilla
1 egg
1 c. rolled oats
3 tbsp. grape jelly

Heat oven to 350.

Lightly spoon flour into measuring cup; level off.

In a large bowl, combine all ingredients except the 1 cup of flour and grape jelly and oats. Mix well. Stir in reserved 1 cup flour and oats.

Shape into 1 inch balls and place 2 inches apart on an ungreased cookie sheet. Press balls flat with fork dipped in sugar, making criss-cross design.

Place 1/8 teaspoon jelly on center of each cookie. Bake for 12-14 minutes or until light golden brown. Makes 5 dozen.
